Pourquoi avez-vous choisi cette section? <\/em><\/strong>J\u2019avais un salon de Th\u00e9 \u00e0 Beyrouth mais je n\u2019arrivais pas \u00e0 l\u2019achalander en g\u00e2teaux. Sur le march\u00e9, il n\u2019y avait que des \u00abG\u00e9noises-cr\u00e8me au beurre\u00bb d\u00e9clin\u00e9es dans toutes les formes. Pour moi qui voyageais beaucoup, je trouvais ces g\u00e2teaux lourds, sans originalit\u00e9, sans vari\u00e9t\u00e9&#8230; C\u2019est dans ce salon qui \u00e9tait par ailleurs le restaurant \u00abLe Retro\u00bb, que j\u2019ai crois\u00e9 B\u00e9chara Nammour. Il m\u2019a propos\u00e9 de prendre la direction de \u00abLa Mie Dor\u00e9e\u00bb, qui n\u2019\u00e9tait \u00e0 l\u2019\u00e9poque qu\u2019une boulangerie qui vendait ses produits sur place et dans les supermarch\u00e9s. Mais gr\u00e2ce \u00e0 la touche de Rita Nammour et sa s\u0153ur Sandra Tarazi, l\u2019endroit \u00e9tait d\u00e9cor\u00e9 comme un salon de th\u00e9 anglais, et avait beaucoup de charme. Je me suis donc embarqu\u00e9e dans cette aventure, et le Salon de th\u00e9 s\u2019est mis \u00e0 servir salades, sandwiches, devenant une adresse tr\u00e8s fr\u00e9quent\u00e9e le midi. Toutefois, ce qui m\u2019interpellait le plus, me passionnait, \u00e9tait le c\u00f4t\u00e9 \u00abp\u00e2tisserie\u00bb. J\u2019ai donc, avec l\u2019aide d\u2019un chef libanais, le regrett\u00e9 Joseph Frem, \u00e9labor\u00e9 de nouvelles recettes, cr\u00e9\u00e9 d\u2019autres textures -le Rio Negro en est un exemple- d\u00e9velopp\u00e9 la gamme des fours secs et frais, cr\u00e9ant de toutes pi\u00e8ces une gamme de cadeaux de f\u00eates, des \u00abarrangements\u00bb, alors que Noura en avait le monopole dans nos r\u00e9gions, et une chocolaterie ad hoc. La belle aventure a pris fin suite \u00e0 un conflit survenant huit ans apr\u00e8s son d\u00e9but&#8230;<\/p>\n<p><strong><em>Comment est n\u00e9e Cannelle? <\/em><\/strong>L\u00e0, stimul\u00e9e par mon associ\u00e9 Daniel Haddad et soutenue par lui, j\u2019ai d\u00e9cid\u00e9 d\u2019avoir une p\u00e2tisserie telle que je la concevais. J\u2019ai voyag\u00e9 et durant cinq mois j\u2019ai int\u00e9gr\u00e9 trois \u00e9coles de cuisine. Sur un salon tenu pour les professionnels, j\u2019ai achet\u00e9 le mat\u00e9riel n\u00e9cessaire, les moules et les cercles et je me suis mise \u00e0 la recherche d\u2019un chef fran\u00e7ais. Puis j\u2019ai install\u00e9 le tout dans un local que mon associ\u00e9 nous louait, et c\u2019est ainsi que Cannelle est n\u00e9e.<\/p>\n<p><strong><em>Pourquoi avoir opt\u00e9 pour le nom de Cannelle, comme enseigne? <\/em><\/strong>Cannelle est une \u00e9pice qui est souvent utilis\u00e9e en p\u00e2tisserie. On la retrouve dans la tarte aux pommes, la brioche \u00e0 la cannelle, \u00e0 titre d\u2019exemples. A \u00abLa Mie Dor\u00e9e\u00bb, je me suis d\u00e9couvert une v\u00e9ritable passion pour le c\u00f4t\u00e9 technique de la p\u00e2tisserie. A l\u2019aide d\u2019encyclop\u00e9dies j\u2019essayais des recettes \u00e0 la maison avant de demander au chef de les ex\u00e9cuter. Quand j\u2019ai voulu me lancer, j\u2019ai fait l\u2019\u00e9cole Len\u00f4tre, le Ritz et puis Ferrandi.<\/p>\n<p><strong><em>Cannelle est membre de Relais Desserts international. Etant parrain\u00e9e par deux membres j\u2019ai pr\u00e9sent\u00e9 une demande, subi un examen du laboratoire sur place&#8230; et \u00e9t\u00e9 accept\u00e9e. Nous sommes contr\u00f4l\u00e9s et examin\u00e9s r\u00e9guli\u00e8rement, \u00e0 l\u2019improviste et par les d\u00e9l\u00e9gu\u00e9s charg\u00e9s de nous noter. Qu\u2019est-ce qui vous caract\u00e9rise?<\/em><\/strong> Nous offrons un \u00e9ventail complet en boulangerie, chocolaterie, glacerie et entremets. Nous prenons en charge aussi bien les petites r\u00e9ceptions que les grands mariages.
