Ici, \u00e0 Jounieh, dans le Vieux Souk, le lieu est comme vous le constatez, \u00e0 l\u2019image du style de Chez Zakhia. Un emplacement qui offre le choix, soit de rester \u00e0 l\u2019int\u00e9rieur, dans une salle climatis\u00e9e, soit de s\u2019installer \u00e0 l\u2019ext\u00e9rieur, devant la mer. Ici, le lieu est plus vaste, plus facile d\u2019acc\u00e8s et plus proche pour la client\u00e8le.<\/p>\n<h3><strong><em>Votre client\u00e8le est fid\u00e8le. Quelles sont les cl\u00e9s de cette fid\u00e9lisation? <\/em><\/strong><\/h3>\n<p>Ma client\u00e8le me conna\u00eet et moi je la connais. Mon look est caract\u00e9ristique, cheveux blancs et tenue blanche, et je suis toujours pr\u00e9sent, ne quittant presque jamais le restaurant. Bien plus, je m\u2019adonne enti\u00e8rement \u00e0 la t\u00e2che, mettant personnellement la main \u00e0 la p\u00e2te. Ma client\u00e8le? Je l\u2019accueille et la guide dans le choix du menu, traditionnel, fait maison, mais unique. Je m\u2019occupe moi-m\u00eame des commandes, s\u00e9lectionnant soigneusement les l\u00e9gumes et les poissons du jour. M\u00eame les \u00e9l\u00e9ments du d\u00e9cor sont caract\u00e9ristiques, l\u2019osier, la couleur du bois, la mer sont tous inspir\u00e9s du concept de Zireh \u00e0 Jbeil. Ce qui nous distingue aussi et surtout, c\u2019est notre mani\u00e8re de pr\u00e9parer le poisson et ce secret du chef qui attirent la client\u00e8le depuis nos d\u00e9buts \u00e0 Zireh.<\/p>\n<h3><strong><em>Votre histoire \u00e0 Zireh a l\u2019air passionnante. Parlez-nous-en&#8230;<\/em><\/strong><\/h3>\n<p>Mon histoire avec cet \u00eelot remonte \u00e0 1984. J\u2019ai grandi sur la c\u00f4te de Byblos, o\u00f9 j\u2019organisais, au d\u00e9part, des randonn\u00e9es en mer vers cette \u00eele, situ\u00e9e \u00e0 300m de la c\u00f4te. Tr\u00e8s vite, j\u2019ai compris la n\u00e9cessit\u00e9 d\u2019inclure un service de restauration \u00e0 ces visites, qui gagnaient en popularit\u00e9. En improvisant un restaurant familial sur cette crique accessible uniquement par bateau, nous avons \u00e9t\u00e9, mon fr\u00e8re, mon cousin et moi, pionniers en mati\u00e8re de restauration de poisson. Le lieu pouvait accueillir une centaine de personnes assises. Dans un grand bassin, poissons, langoustes, poulpes, oursins et autres \u00e9taient cuisin\u00e9s sur place, devant la client\u00e8le. Ma grand-m\u00e8re pr\u00e9parait les plats servis avec du hommos et des frites, et notre client\u00e8le \u00e9tait ravie de ce succulent menu servi sur place. Elias Skaff, Maroun Battal, Saad Dalloul, Rony Sa\u00efkali, Roy Haraoui, Sarkis Chalhoub, Charbel Ghanem&#8230; faisaient partie des personnalit\u00e9s fid\u00e8les au lieu. En 1999, nous nous sommes install\u00e9s \u00e0 Nabeh el Teffeha, Halat, et en 2001, j\u2019ai d\u00e9m\u00e9nag\u00e9 mon enseigne \u00e0 Amchit, cr\u00e9ant, seul, mon restaurant \u00e9ponyme Chez Zakhia.<\/p>\n<h3><strong><em>Quel est votre plat f\u00e9tiche? <\/em><\/strong><\/h3>\n<p>Le poisson envelopp\u00e9 de gros sel. Nous sommes m\u00eame fiers de notre enseigne. Chez Zakhia a r\u00e9ussi \u00e0 introduire et \u00e0 faire conna\u00eetre Zireh, Amchit, et maintenant Jounieh. L\u00e0 o\u00f9 nous nous sommes install\u00e9s, nous avons contribu\u00e9 au d\u00e9veloppement de la r\u00e9gion. L\u2019appartenance au lieu et la passion du m\u00e9tier que j\u2019ai inculqu\u00e9e \u00e0 mes fils Peter et Tarek, mon personnel, cette \u00e9quipe familiale qui est rest\u00e9e fid\u00e8le \u00e0 la maison, du grand chef au responsable des l\u00e9gumes et des fruits&#8230; 80% de mes employ\u00e9s sont ceux de Amchit et ils font notre force. Sans compter aussi et surtout la pr\u00e9sence, le suivi et le contr\u00f4le en continu de notre part, et le renouvellement, l\u2019upgrade en permanence, indispensable au succ\u00e8s de l\u2019\u00e9tablissement. Sa client\u00e8le est fid\u00e8le et sa renomm\u00e9e n\u2019est plus \u00e0 faire. Toutefois, les nouveaut\u00e9s que je compte introduire sont uniques \u00e0 la r\u00e9gion.
